Nepalese Curry Recipe

Curry Recipe

Curry for 5 people (approx 1kg chicken)

Onion                                                1pc (big)

Tomatoes                             4pc

Garlic                                     1tbl spoon (puree) or 5 cloves if using fresh

Ginger                                   50gm

Chilli                                       according to taste

Turmeric                               1 teaspoon

Coriander                             1 tbl spoon

Clove                                      5pc

Cardamon                            1 teaspoon

Cumin                                    1 tbl spoon

Cinnamon                             1 teaspoon

Bay leaves                            5pc

Fresh Coriander                  to sprinkle on top at the end

Chop onion, tomato, garlic, ginger, chilli, fresh coriander.

Fry onion with oil until it becomes transparent and add tomatoes and continue to fry till tomatoes turns into paste, about 8-10 minutes.  If it gets dry, add a little water.

Add chilli, turmeric, coriander powder, clove, cardamom, cumin, cinnamon, salt, bay leaves and cook for 10-15 minutes with low flame.  Add water if needed.  Add ginger and garlic and cook for 5 more minutes.

Add chicken or vegetables into the mixture and cook until it is cooked.

Finally add fresh coriander on top before serving.
